On the baking sheet put a head of garlic, with the top sliced off, dripped with olive oil and wrapped in tin foil. Why didn’t I ever do this before.
When potatoes are done melt 2 Tbsp butter in a pan, add some salt. Squeeze the garlic into a bowl, smash it, and add to the melting butter.
Pour this over the potatoes.
