A pork roast is too big for two people so it will need to be cut in half.
One half will go into a brine of salt and sugar, the other will become pork and scallions with onions in place of the scallions.
This is the recipe:
Slice pork into finger size pieces and marinate for 30 minutes in
1 Tbsp Dark Soy
1 Tbsp Regular Soy
2 Tbsp Dry Sherry
1 tsp sugar
2 Tbsp corn starch
2 Tbsp Sesame Oil
In wok or fry pan
6 pork chops
2 bunches scallions
4 cloves garlic
Save marinade, it will be added at the end
Stir fry your meat in 2 Tbsp Peanut Oil, remove and set aside.
Pour off all but enough oil to fry your scallions, add garlic and stir for one minute, add remaining marinade, boil, add meat and serve.

stir frying went well
I didnt have scallions so substituted in two small onions
I burned them
SO started with a new pan and for speeds sake chopped them fine, cooked them quickly,
Tossed in the pork…
served over rice….
