I first had huevos estrellados on Miami Beach and I fell in love. Crispy jagged potatoes, carmelized onions, chunks of chorizo topped with a fried egg! What, I ask you, is not to love about that?
There is no one way to make this dish. Any fried potato or oven baked will do, it’s ups to how much work you want to do and what flavors you like.
Today I am baking potatoes ahead of time. Will put them in the refrigerator and come back tonight and after carmalizeing my onions and my duck bacon ( try Babe Frohman) I will toss the potatoes in the pan with a large chunk of butter to brown them up. Then everything back in the pan to heat, pushed to the side, rebutter pan, fry egg… serve
